EASY SUMMER SALAD

3 tsp honey
1 1/2 tsp ground cumin
3 tbsp fresh lime juice
1/2 tsp salt
1/4 cup EVOO
3 mangoes, peeled & cut into 1/2-inch pieces
4 mini cucumbers OR 1 large cucumber, cut into 1/2-inch pieces
1/2 small red onion, thinly sliced
3 tbsp thinly sliced fresh mint leaves OR 2 tsp dried mint
1/4 cup crumbled goat cheese
2 tbsp sliced almonds

In a small bowl mix together honey, cumin, lime juice, salt and olive oil; set aside.
In a medium-size bowl mix together mangoes, cucumbers, onion and half the mint. Toss with dressing and place the salad on a serving platter. Sprinkle the remaining mint, the cheese and almonds on top of the salad.
