      I love banana‘a Foster so I thought I’d try the same basic recipe substituting other fruits to use as toppings for ice cream.

      2 Tbsp butter
      1/4 cup brown sugar
      1/4 cup rum or brandy

      1 lb cherries, pitted
      or
      2 large peaches, sliced
      or
      2 ripe bananas, peeled, cut in half then half again lengthwise

      Melt the butter and sugar together, add the fruit and cook on medium heat a few minutes until the fruit is soft. Remove the pan from the heat, add the rum or brandy and light with a long match or lighter. When the blue flame goes out, the fruit topping is ready.

      Spoon some ice cream into 6 bowls, top with the fruit and serve immediately.

      I let my topping cool just a little before spooning it so the ice cream doesn’t melt so quickly.
