      I have been a big fan of green veggies all of my life, but lately my body has been craving it constantly (maybe the vitamin A). I love to grab a different variety of greens...kale, collards, mustard, spinach, escarole and place them in a big pan, add some water, fresh or powdered garlic, salt, pepper and cover for ten minutes..honestly, I feel rejuvenated afterward.

        • I grew up on a lot of greens, Mary and have a hard time finding them over here. By the time they get to us they‘re spoiled in transit. I’ve grown them on my own and that works fine. I love to chop up fresh greens in my salads, especially Kale. When I travel to see my mother, she always makes a big pot of Escarole soup for me because escarole is unavailable where I live.

          Now I’m craving it!

        • Definitely love my veggies. Now if we could just get rid of them darn pesticides, fertilizers, etc, we may all get all the necessary nutrients, vitamins and minerals without having to eat 40 bowls of spinach. Too bad that’s very unlikely. And even if we grow our own or buy organic, they are still being grown in soil that has been over farmed and depleted of these much needed nutrients.

        • Love greens, I just won’t eat spinach or aspparagas(sp) Although I have tried spinach tortillas the other day and I did like them. I didn’t know they had such a thing..lol, It was a green tortilla and I asked my friend what the heck kinda tortilla Is that? she said It was spinach, but It didn’t taste like It, It really to me had no taste. But I ate Itestatic

        • since having my gall bladder out last jan, i have to becareful of the greens i eat frown most do numbers on my body...

        • I love most greens except kale because it doesn’t agree with my stomach. My absolute favorite greens are mustard greens but you have to go through so much preparing the fresh ones. The frozen ones just aren’t the same. I like turnip greens as well and have been known to mix them with mustards, turnips and all.

          I don’t eat asparagus or brussel sprouts, but I like my spinach raw or slightly sauteed with a little garlic and butter. I don’t eat artichokes either because they taste a lot like lima beans which I never liked, even in succotash.

        • You are all making me hungry!  I love spinach and will even eat it with eggs in the morning for breakfast.  Today I had an egg white omelet with spinach, tomatoes and zucchini!  It was soooo good.  I have to try your recipe Mary.  It sounds yummy too.  Have you ever had escarole and beans?  My moms used to make that all the time when I was younger.
