  • Healthy Ceasar Salad!

      Caesar Salad

      2 cloves garlic
      3 fillets canned anchovies
      1/4 cup Smart Balance Omega Plus mayo
      1 TBSP lemon juice
      1 tsp Worcestershire sauce
      2 TBSP OptOmega or Olive Oil
      1/4 c. Parmesan cheese
      1 head romaine lettuce, chopped
      1 avocado

      Put garlic cloves in food processor, pulse a couple of times to chop. Add anchovies (don’t omit these, it really DOESN‘T taste fishy!), mayo, lemon juice and Worcestershire sauce. Blend until smooth. Add oil and 1/2 of the Parmesan cheese, blend just until combined.  

      Toss romaine, chopped avocado, remaining Parmesan and dressing together. Add grilled chicken to make this into a full meal. Makes 4 servings.
