      Joe was craving homemade egg noodles like his grandma made. This is the second time I’ve made them now for him. I’m using them in chicken soup but they’d be great in any noodle dish, including stroganoff. They‘re easy to make - I have one of those hand crank pasta machines. But my grandma just rolled them out on a well floured board and cut them by hand with a knife.

      1 1/4 cup all purpose flour
      1 beaten egg
      1/2 tsp salt
      1/4 cup milk

      put the flour and salt in a small bowl
      Add the egg and milk
      Mix with a fork until it’s more or less blended

      Turn the dough out onto a floured board and knead for 5 minutes, until smooth
      Let sit, covered with a towel or plastic wrap, for 10 minutes

      Now either cut into sections and roll out with a pasta machine or roll the whole thing out into a large rectangle on a well floured board. It may be easier to handle if you roll it out into 2 rectangles.

      from the long end, fold it up gently into a little package and cut strips from the short end.

      Unroll the strips, lay them out onto a board and let dry for an hour or so

      Line the strips up and cut into desired lengths
