If anyone has an ice cream maker, here’s a really simple and good recipe.

      1 1/2 C Heavy cream
      1 1/2 C any milk, even skim
1 whole egg plus 1 egg yolk, beaten
      2/3 C sugar
1 Vanilla bean, split and scraped or
      1 tsp. vanilla **
Chocolate chunks, chocolate morsels, chips whatever you have. About 1/2 cup or so.

Combine cream, milk, eggs, sugar and vanilla bean in a heavy saucepan. Heat on medium, stirring until the sugar melts, the mixture is infused with the vanilla and the whole thing thickens until it coats the back of a wooden spoon. ( thicker than cream, not as thick as pudding)

Strain the mixture into a bowl, cover with plastic wrap and chill very well or overnight.

** if you‘re using vanilla instead of vanilla bean, add the vanilla after cooking.

Pour the mixture into an ice cream maker and let churn for only 20 minutes. The last 5 minutes, add your chocolate chips.

Spoon ice cream into a container and allow to freeze for several hours.

Churning it for only 20 minutes keeps too much air from getting into the ice cream. The texture will be more like gelato, thick and very creamy.
