      I’ve been looking for an exception recipe for Spinach Artichoke Dip for years. I have several that are just okay, but I am looking for a fabulous one... happy

        • This recipe is for just the artichoke dip but I know it’s good. You can add chopped spinach I would imagine.

          4 small jars marinated artichoke hearts
          1 1/2 C mayonnaise
          1/2 C grated parmesan
          4-5 cloves garlic, minced
          Chopped spinach - maybe 1/2 a box?

          Preheat oven to 350
          Drain and chop artichokes. Add mayo and parmesan cheese. Add garlic and spinach. Mix well. Turn into a baking dish and bake 20-30 minutes.

        • Now the cream cheese sounds really really good! I’m going to write that down and use it the next time I entertaining. If we spread the calories around the room, no one has to overindulge!

        • I love spinach artichoke dip! I make it for company and put it in a minicrockpot. It is so foolproof!

          Recently, someone gave me a heathy recipe for a Spinach Artichoke Gratin that satisfies my craving for the high calorie dip. Plus, it is an easy dish to whip together and have in the fridge for those days when I am busy. I ususally add chopped up roasted red pepper and sometimes crab to it. (I also do that whwn I make the dip). Here is the recipe for all those interested.

          Spinach Artichoke Gratin
          16 oz fat free cottage cheese
          egg subsitute equivalent to two eggs
          3T parmesan cheese
          1 Tbs fresh lemon juice
          1/8 tsp white pepper
          1/8 tsp nutmeg
          2 10 oz packages of frozen chopped spinach, thawed and drained
          3 med green onions thinly sliced
          10 oz package frozen or canned artichokes thawed
          2 T parmesan to sprinkle on top

          Preheat oven to 375
          Lightly spray a 1 1/2 quart baking dish with cooking spray

          In a food processor or blender, combine cottage cheese, 3 T parmesan, lemon juice, peper and nutmes until smooth

          Squeeze moisture from spinach and combine with the green onions and cottage cheese mixture in a large bowl. Spread half of the mixture in the baking dish, top with the artichoke hearts (chopped in bite size pieces) and spinkle with the 2 T of parmesan cheese. Cover with the remaining cheese mixture over and bake covered ffor 25 minutes or until set
