Growing up Italian we ate a lot of pasta. I learned early on the every sauce needed to be matched with the correct noodle. For delicate sauces like a fresh tomato and basil quick skillet sauce Angel Hair was appropriate. For hearty sauces made with ground meat a thick noodle like fettuccini was needed. If we were going to bake a pasta dish other than lasagna we used a tube pasta that could stand up to the oven without getting mushy but a lot of sauce was needed or it would come out dry.
There are a lot of specialty pasta shapes in the stores today. It’s fun to experiment. When I make noodles for our granddaughter I let her pick one with a shape she likes so it makes meal time fun.
What’s your favorite noodle?
I forgot to mention that when I make macaroni and cheese I like to use either a medium elbow or a medium shell. We also make homemade pasta quite a bit but we use eggs so it’s kind of heavy.
I would love to learn how to make my own pasta. Unfortunatly this is project #1452. So many things to learn and try!
I looove pasta! I can eat it everyday and never get tired. These days I like plain old spaghetti the best, but I change shapes quite often. I prefer shorter forms when I put veggies in the sauce; with spaghetti, chunks tend to stay in my plate ‘til the end, it’s harder to mix.
Cynthia, could you give us the recipe of a few of your pasta sauce? I would be interested to try one out!
Aaaaaahhhhhhhh pasta........ I have a love hate relationship with it. I love it but hate how it makes me sleepy and also makes me crave it!
Cynthia I don’t make my own pasta but I do use the same noodle thought as you when it comes to the sauce. My favorite sauce is definitely a pomodoro

Love pasta!..but my tummy bulge doesn’t..lol...we pretty much follow the same tradition. Son and I love the delicate pasta, while hub loves the thicker types. Looking forward to making a lasagne tomorrow.
