      When I asked a question about what everyone likes in the way of chocolate treats, Term told me that she had a Key lime candy that was delicious. So this one is for you, Term!

      8 oz good quality white chocolate
      2 oz key lime concentrate
      Cream to bring the liquid up to 1/3 cup
      1/4 cup sugar - or more if you like it sweeter. This is a little tart.

      Combine the lime juice, cream and sugar in a medium saucepan. Bring to a boil, remove from heat and pour in the white chocolate. Allow to sit for 60 seconds and then whisk to blend it all together. Pour in a bowl. It can sit, covered with plastic wrap in a cool part of the kitchen. No need to refrigerate unless you want to.

      Now what to do with it? I’m going to use it for a truffle center. It’s too soft for rolled truffles. It has a spreadable texture so it would be good on graham crackers or even as a spread for toast, like lemon curd would be. It can be warmed in the microwave and poured over ice cream. It can be eaten with a spoon!
