      1/3 cup unsweetened cocoa powder
      2 tablespoons instant espresso powder
      1/4 teaspoon salt
      2 cups water
      1 1/2 cups low fat milk
      4 tablespoons sugar

      In a medium saucepan, combine 1/3 cup unsweetened cocoa powder, 2 tablespoons instant espresso powder, and 1/4 teaspoon salt.  Starting very gradually (adding 1 tablespoon at a time), vigorously whisk in 2 cups of water until very smooth; whisk in 1 1/2 cups of low fat milk.  Bring to a simmer over medium heat.  Stir in 4 tablespoons sugar until dissolved. If desired, strain through a fine strainer before serving.
