      Unfortunately, when I make pasta dishes I rarely follow a recipe or write anything down. I just throw what looks good into a skillet and add cooked pasta to it.

      Tonight I cooked a shallot in some olive oil, added sliced mushrooms, garlic and a little bit of chopped frozen spinach. I poured in roughly 1/2 cup to 3/4 cup of white wine and let that simmer while the pasta cooked. Just before everything was finished, I added 1/4 cup of cream and 1 can of smoked salmon, chopped up, to the skillet. I used tongs to grab the linguine out of the water, added it to the sauce and divided it between the two bowls for dinner. There’s a little left for lunch tomorrow for me.

      If I do this again, I’ll omit the cream. It wasn’t needed and I’d prefer to save the fat and calories.
