      The other thread was getting long! I thought I’d start another one.

      I’m running a little bit short of ideas. This one sounds a lot like the pasta e faggiole but it’s actually more like a take on Rattatouille - say that ten times fast!

      Zucchini and potato stew

      I haven’t made it yet so the ingredients are a little loose right now but this is what I think I’m going to do:

      3 medium sized zucchini cut in half moons
      2 cloves garlic, minced
      1/2 onion, chopped
      1 14oz can tomatoes
      1/2 red bell pepper, rough chopped
      4 small red potatoes, cubed
      salt and pepper to taste
      Herbs as desired
      vegetable broth or water as needed

      Put everything except for the broth or water in a saucepan. Simmer and add some liquid if need be to keep from drying out. You want it to be thick like a stew. I’d say cook for an hour so everything is tender.

      This would be nice with some crusty bread and a sprinkling of parmesan.

      My husband who is a total carnivore will have a bowl of this and I’ll grill him a couple of bratwurst.
