In a year or two, I plan to hold a little stand at the Saturday market village near where I live. I would like to sell honey, jam and other goods cooked or baked with products of my garden. Since muffins don't really exist in France (at least not good ones like in America), I thought having muffins to sell would be a nice plus. This is a muffin recipe I invented and I think it could sell. If some of you would like to test it and tell me what you think, that would be great. Any new ideas on how to improve the recipe is welcomed. If you didn’t like it, tell me too! The kind of honey you use will influence a lot the final taste. Don't use cheap commercial honey made in China. Try and find an all flower honey that is from your area, or have fun with specific tasting honey like lavander or chesnut.
Oatmeal Honey and Chocolate Chips Muffins
1 cup oatmeal
1 cup whole milk (if you can find it, non pasteurized milk is even better!!)
1 cup white flour
1 tea sp baking powder
1/2tea sp salt
¾ cup brown sugar
1 egg, beaten
4 tea sp melted butter
2 table sp honey
Chocolate chips (I chop dark baking chocolate)
1.Mix oatmeal and milk and let it rest.
2.Preheat oven at 185°C (365F°)
3.Mix flour, baking powder, salt, sugar and chocolate chips in another bowl.
4.In a pot, melt butter. Take off heat. Add oatmeal mix, egg and honey. Mix.
5.Add liquid ingredients to dry ones. Stir just enough to humidify.
6.Fill muffin cups to ¾. Bake for about 25 minutes or until golden.

I’m off tomorrow so I’ll make them and bring them to work on Thursday.
They‘re in the oven now. The batter looks great. I, too, chopped up some good chocolate (I spent 8 years as a professional chocolatier) and added that to the dry ingredients. I always have chocolate on hand even though I gave up my business a couple of years ago.
I’ll post again when they cool and I try one!
I just had one. The taste was really nice. One thing I noticed was, they didn’t rise very high. I filled them a little more than 3/4 full but there was no “muffin top.” Maybe my baking powder is too old. I think that’s the leavening agent in these? The batter made a dozen regular sized muffins. I used paper muffin cups. I really like the chocolate chunks in them. That adds a nice amount of extra goodness. I also like the oats. These muffins have a nice combination of healthy goodness and yet make a nice dessert or afternoon snack with a cup of tea.![]()
Txs Cynthia! Mine never rise up to make huge tops either. I think it is the honey that does that. Do you think adding more baking powder would do the trick? Sometimes putting too much has a reverse effect.
I’m not sure. I thought maybe my baking powder was old. I can’t remember when I bought it. I brought the muffins to work, though and every one really liked them. One of the girls took the rest home to her family. I’ll probably make another batch this weekend. the taste is delicious.
