      Nutty Edamame Salad

       Edamame or more simply, soybeans are a great source of fiber and protein and the perfect addition to any summer salad rotation. You can find them already shelled in the freezer section.  

      Make it an EntrĂ©e: Add salmon.  

      Serves 4
      Total time: 20 minutes  

      1 pound shelled edamame
      1 red bell pepper, chopped
      2 scallions, chopped
      1/4 cup red onion, finely chopped
      2 tablespoons chopped mint
      1/4 cup unsalted sliced almonds (or chopped cashews), toasted
      2 tablespoons sesame oil
      2 tablespoons soy sauce
      1 tablespoon red wine vinegar
      1/2 teaspoon chili sauce
      Freshly ground pepper, optional to taste  


      1.Place shelled edamame in a pot of salted boiling water for 3-5 minutes.
      2.Drain, rinse with cold water and cool before mixing with the remaining ingredients.
      3.Mix together oil, vinegar and sauces in a small dish and adjust amounts as desired.
      4.Toss dressing, edamame and all other ingredients together well in a large bowl. Serve.
      Tip: Look for items like sesame oil and chili sauce in the international section of your grocery store.

      Tip: If you're only able to find edamame frozen in shell, thaw and remove from shells according to package recommendations.
