  • Snickerdoodles with Cinnamon Chips

      Preheat 375F, Bake 10 minutes or until edges are golden.

      1/2 C butter, softened
      1 C sugar
      1/4 tsp baking soda
      1/4 tsp cream of tarter
      1 egg
      1/2 tsp vanilla
      1 1/2 cups all-purpose flour
      5 oz Hershey’s Cinnamon Chips
      1/2 C chopped pecans

      2 Tblsp sugar
      1 tsp ground cinnamon

      In a medium mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.  Add 1 cup sugar, baking soda, and cream of tartar.  Beat until combined, scraping sides of bowl occasionally.  Beat in egg and vanilla until combined.  Beat in as much of the flour as you can with the mixer.  Stir in any remaining flour.  Mix in cinnamon chips and chopped pecans.

      Cover and chill dough about 1 hour or until easy to handle.

      Combine the 2T of sugar and cinnamon in small bowl.  Shape dough into 1” balls and roll in sugar mixture to coat.  Place two inches apart on ungreased cookie sheet or cookie sheet with parchment.

      Bake at 375 degrees for 10 minutes or until golden on edges.

      This recipe should make about three dozen cookies.
