  • Sugar free applesauce

      We were given a box of Washington State apples for a gift and I’ve been making applesauce with them. This morning I made it without sugar and it turned out great.

      8 Fuji apples, peeled, cored and cut into chunks
      2 vanilla beans
      1/2 teaspoon ground cinnamon

      Use a large heavy botton saucepan - about 3.5 quart
      Cut up the apples into the saucepan
      Add the cinnamon - use more if you’d like
      Split and scrape the vanilla beans into the apples and toss in the whole beans

      Start it on high heat until the apples start to  give up some liquid. Turn down the heat to medium and cook, uncovered, for about 30 minutes, until the apples are very soft and the liquid has been absorbed.

      At this point you can use a potato masher to break up the apples or process them in a food processor to make it more smooth.
