      This is so good and so easy!! I add extra garlic and seasonings. I also use 2 cans of chicken,just because it’s easier and faster!  

      1 can (14.5 oz) Mexican Stewed Tomatoes
      1/2 C chopped onion
      2 cloves garlic, crushed (I use at least 5 or 6)
      1/2 tsp dried oregano (I use about 2 tsp)
      1/2 tsp chili powder (I use at least 1 TBL!!)
      1 small can green chillies (drained)
      1/2 lb cooked chicken breasts
      4 C tortilla chips
      1 - 1 1/2 C pepperjack cheese

      Preheat the oven to 375.
      Drain tomatoes, reserving the liquid; chop tomatoes
      Combine reserved liquid, onion, garlic & spices in large skillet. Boil for 5 minutes
      Stir in tomatoes, chillies and chicken. Cook for about 3 minutes.
      In a 2-quart casserole, layer 1/2 the chips, then 1/2 chicken mixture, then 1/2 the cheese. Repeat the layers.
      Cover and bake 15 minutes or until heated through.

      Serve with sour cream
