I had to share this one.
1 package ground turkey - about a pound and a quarter
1/2 large onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
2 ribs celery, chopped
2 cans black beans, drained and rinsed
1/2 - 3/4 cups frozen corn - or a small can of corn, drained
1 10oz can enchilada sauce
1 can chopped tomatoes
1Tb smoked paprika, chipotle chili powder or other chili powder to taste - if you want the chili to be spicy. If not, the enchilada sauce should give enough spice for someone who prefers a mild chili.
Spray the bottom of a large saucepan with cooking spray.
Saute the turkey with the onion and garlic until meat is cooked. Add the celery and bell pepper and cook a few minutes longer until vegetables are soft. Add tomatoes, beans and enchilada sauce. Add paprika, chili powder, if desired, and frozen corn. Add enough water to make the consistency you like and simmer for one hour.
I also like to add some cilantro or parsley at the end. I use the cooking spray to keep the fat down.
this recipe came about when I was looking in the freezer and the cupboards gtrhing to come up with something to make for dinner that would keep in the fridge for a few days. I had a random can of enchilada sauce I needed to use up. This chili came out really good - never thought of using enchilada sauce before.
Love the idea! Same here, when I am not looking for something in particular to cook, then another ingredient jumps out at me.
