What I'm Having For Lunch Today

I hope everyone’s Monday is going great!  

My hub is coming home for lunch and here’s what I’m making:  

Hot ham & cheese sandwiches
Sliced grapefruit
Fresh brewed iced tea  

These sandwiches are a favorite of mine so here’s how I make them:  

Use the pepperidge farms sandwich rounds (they‘re awesome) any variety
Thin sliced ham - I like either Rosemary Ham or Sun Dried Tomato from the deli
50% reduced fat cheese - I like Cabot’s cheddar
light mayo
spicy mustard
sliced cherry peppers (optional if you like them)  

Spray a flat pan or baking sheet with olive oil spray.  Put the sandwich rounds on first. On one of them put a small dollop each of the mayo and the mustard & mix it together.
Layer on ham and sliced cheese - I use a slice of the cheddar and two thin slices ham
slice peppers in thin pieces and place on top of ham/cheese if you use them
nothing on the other slice of the round.  just let it get crisp!  

Bake at 400 for about 6 minutes.  Watch your time at first.  Remove from oven, put the two sides together and you’ve got lunch!  

This sandwich tastes amazing good and it’s less than 300  calories.  In fact, depending on how much ham/cheese you use it  may only be about 230 - 250.  I love citrus fruit with this but any kind you like is great.
