    • We‘re not vegetarians but we do eat a lot of pasta with veggies. In one pot I have my noodles of choice cooking. In a skillet I have olive oil, garlic, red chili flakes, asparagus or broccoli or canned tomato or just about anything that sounds good to me at the time. When the veggies are done and the pasta is al dente, I use a slotted spoon to put the pasta in with the veggies in the skillet, toss it all together, throw on some parmesan (optional) and dinner’s done!

    • Pasta is always a good thing!

Make a list of the veggies that you like, if you can’t afford fresh veggies all the time, frozen veggies are always a plus.

Veggie casseroles, veggie soups, even veggie bread (pumpkin bread, carrot bread, zucchini bread) are all good staples.

You would be surprised the dishes you can put together on a budget...check out eatingwell.com!estatic

    • I have a book that I bought years ago from a class-

      David Rabbe’s The Pure Vegetarian

he has 3, I’m sure they‘re on amazon.

even my dh will gladly eat his “egg” fried rice!

lots of easy cooking, easy to find ingredients and inexpensive.

    • Wow good for you! Its a healthier life and you will love how you start to feel.  More energy, better skin and I think your brain functions much better.  I know my short term memory which began to fail me after I had two kids and every year of age it got worse, but when I started to eat a vegan diet, my mind became clearer, memory improved.
If you really want some easy great recipes I recomend Alicia Sylverstone’s book and I have some great recipes ones that we created for our healthy living presentation with Arbonne Vegan Products for Detoxing.  They are amazing,if your interesed I wil forward more information!

    • Ok, I can send you some yummy recipes, which are really healthy and of course delicious. My advice is to be very careful of your soy intake, too much is not good for women.  Do you have a networking websites for your town or city or county?  If so look on it to see if there are any gatherings for vegetarians or vegans.  Sometimes they do meal pot luck dinners and its great way to learn about easy affordable dishes that wont hurt you or your wallet.  Also its a great way to meet interesting healthy people.  I will post some recipes up for you in a day or two.  I also really recomend doing a cleanse that is not starving yourself nor difficult.

    • Hi Connie

You are so welcome.  I love to help people live better lives and I am studying to become Health Coach so this is great for me as well.

Firstly you should look for a local Co-op with organic farmers, it an inexpensive way to get organic fruits and vegetables once a week that are local and in season.  The price should be very good as well. Here in Florida Palm Beach County I can get a co-op weekly at 25.00 feeds the family.  Look on-line and let me know if you find something local to you. As well, I am a consultant with Arbonne a swiss company that  has the best skin care an healthy care products out on the market.  I think its the best cleanse and its simple, its the highest quality you can get and its free from toxic junk and poisens like so many supplement shakes contain.  Plus the recipes are amazing using the products. Arbonnes is Soy free and Vegan.  Really yummy!  I have gone to many Healthy Living Presentations and spoken to Natropathic Doctors who love these products.  I also lost over 12 pounds when I did the cleanse.  I am about to start again this week.  You can email me for now at [Link Removed] and I can direct you to the plan and some recipes.
