One thing about Costco is, while things are pretty inexpensive, buying such large quantity is sometimes a problem.
I bought a bag of Japanese eggplant last Saturday and I’ve been eating it ever since. So far I’ve made ratatouille and lots of stir fry but I’m getting kind of sick of it and I still have 4 of the little guys left. these are the long thing type so they don’t do well with breading and frying for parmesan. Any suggestions?
i love eggplant. grilled sliced with olive oil. stuffed eggplant bake. eggplant, eggs and bacon pie, eggplant and various veges on a skewer grilled, barbecued or steamed. eggplant fritters or pancakes. eggplant cold soup....
Some very good ideas as Plaspak mentioned, watched Lidia’s Italy the other day and she made stuffed eggplant with a breadcrumb and ground meat stuffing..looked divine!
I love eggplant! Although I’m not a good cook and I don’t cook much at all....lol
I enjoy a really good eggplant salad when I go out. Maybe you can make a salad out of them.
Moussaka is yummy, but a lot of work. Love eggplant Parmesan—you can bread & fry slices to make the parmesan & if you don’t use it all you can freeze the slices for later
I love eggplant cooked anyway! However, I have to admit I haven’t preparead in years. But I think I will after reading these answers.
