If you were going to take a chocolate class for fun - what would you want to learn? This is a research question for my business. I’ve added teaching to my work.

    • My last class said they wanted to learn basic tempering and also wanted the recipes printed so they could duplicate our creations when they get home. They also wanted me to have certain items on hand for purchase like disposable piping bags and flexible plastic molds. I buy my piping bags in cases of 1,000 so no one wants to do something like that! They wanted to be able to buy a few of this and a few of that.

    • I’d want to learn how to make a really, really good truffle. I already know how to make a truffle, I’d jsut want to know how to make it better.  I’d also be asking you a million questions about how to handle, store, heat, etc various kinds of chocolates.  

      I think a class on chocolate fondue would be great, especially for less experienced cooks.

    • I think I’d like to practice how to make molded chocolates...rather than truffle/hand made kind.  How do you make them look beautiful and professional with the tools you get from Michael’s!

      I’d also like to know how to make my own - organic - no nasties added chocolate and filling.

      Oh...and any class I take I want to learn how to make the recipes with basic kitchen supplies.  I don’t want to have to go out and buy a whole lot of specialty items that I will only use 1 -2 x a year to make that special recipe.

    • I would love to take classes such as an elegant dessert class, entertaining with chocolate, heart healthy chocolate as well as a chocolate and truffel 101 class that would include temuring and basic tips for working with chocolate. I would also love to take classes related to the sugar holidays such as Halloween, Christmas, Valentines and Easter. Let us know how it works out!

    • Cynthia that is great that you are adding classes to your business. My daughter is an aesthetican and I have been trying to get her to add makeup classes to her business. Best to you in this endeavor. Are you going to do them online by video also? That would be another option!heartestatic

    • Cynthia, I would love to know how to make chocolates with the filling (and yes absolutely the Passion Fruit truffle-that was soooo yummy!).  

      My husband loves chocolate covered cherries.  I would love to know how to make those for him.  

      Also, how to use chocolate in cooking and entertaining.  

      I love the way you colored the chocolate too.  I think if you offered a class with anything about chocolate, people would come.  Decorating chocolates would be fun and how to make chocolate covered desserts as well.

      It’s wonderful that you are expanding your classes.  Great idea!

    • I would like to learn more about the various chocolates and techniques for making my own chocolate from scratch.  I don’t know a thing about the various chocolates (I only know dark, white and milk chocolate).  So it would be fun not only to learn to make a truffle, but actually make my own unique chocolate recipe that I could use to make a truffle.

      And I like the idea of putting together a “chocolatier makers kit” as a souvenir for your students to take and try at home!

    • Cynthia, for me it would be fun and rewarding to give chocolates as gifts..and working with unique and basic designs, say for instance a female family member graduating from high school and she has a love of music..making a basket filled with instruments and music notes, and when you bite into the chocolate there is a creamy center that would be some of her favorite flavors..can’t wait to hear more about your class!estaticestatic

    • I would love to learn how to make quick, simple things like a good chocolate sauce to drizzle over ice cream in the summer (free from all the rubbish in the store bought stuff).  Also chocolatey things that would freeze well.  Also a recipe for something special for birthdays and Valentines.  Love the idea for an online video to teach us.  When can I sign up?!
