    • Last night I diet splurged and had a turkey burger on a whole grain thin sandwich bun. A slice of cheese and 1 1/2 strips of bacon was the splurge. Lots of lettuce and thin onion slices made it perfectly delicious. ;oD

This is the time of year I like to make soups and potato soup is a favorite! I have added in
broccolli, or asparagus and mushroons a few times for my veggie intake instead of a salad.
Do you add anything to yours?

      Cathie... always looking for ideas.

    • Cathie,  the soup I made last night I got the recipe off the net.  I used 3 lg. baked potatoes, lot’s of onion and this recipe called bor chicken broth and evaporated milk.  After the soup was made I just topped it with cheddar, bacon and sliced green onion.  Everyone loved it.  There was only a 1/2 serving left!

I think I’m going to look for a broccoli cheese recipe to make tonight.happy

    • Angel, I’d have to tweak the recipe to skip the evaporated milk, but the rest has my mouth watering! The cheddar, bacon bits and sliced green onion sounds a perfect compliment to potato soup! I grabbed some spinach and turkey sausage out of the deep freezer this morning. Thinking a whole grain pasta with mushrooms, turkey Italian sauage and spinach with white goat cheese cheddar. I need to use up the mushrooms.

Did you succeed in grabbing the last serving of potato soup?

       Cathie

    • Here is a recipe I make for Broccoli Cheese soup we‘re having tonight...I love soup when it’s cold out.

      Ingredients
      1/2 cup butter
      1 onion, chopped
1 (16 ounce) package frozen chopped broccoli
4 (14.5 ounce) cans chicken broth
1 (1 pound) loaf processed cheese food, cubed
      2 cups milk
      1 tablespoon garlic powder
      2/3 cup cornstarch
      1 cup water
      Directions
1.In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
2.Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
3.In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

    • Oh dear.  You‘re all making me look bad.  Last night was cold cereal, the night before was left over pizza, certainly nothing memorable in the last week.  My poor hubby’s tummy is so neglected.

But tonight is roast pork loin, sweet potatoes and a mixed berry tart.
