Yes, I said decadent breakfast oatmeal and it’s not an oxymoron.
A while back I posted a great “Elvis” baked oatmeal that even my carnivore DH enjoys. Now I re-designed a recipe from a bowl called “Lemon Bar” oatmeal into one with the same flavors but as a baked version:
pre-heat oven to 380 and spray an 8 oz. custard cup
This serves one.
1/2 banana
1/4 C almond milk
1-1/2 tsp. lemon juice
1/3-1/2 C oatmeal (check what your particular kind says is a serving! I’ve been using steel cut oats which says 1/3 C, but if I use old-fashioned, it’s a 1/2 C)
2 packets of truvia (any stevia or no-cal sweetener)
dash of salt
1/8 tsp. powder
1/8 tsp lemon and coconut extract
2 tbsp. chopped almonds or walnuts/pecans
1-1/2 tsp. coconut
1/3 C fresh blueberries
Mash banana, milk,juice, extracts, sweetener, salt together. Stir in oats,coconut, nuts and powder. Pour mixture into prepared baking cup. Bake for 25-30 minutes, until firm to touch and nicely browned. Use a knife around the cup and turn onto serving plate. Top with fresh berries. Yum!
it really is-make sure to get a bite of those berries when you take a bite of the oatmeal!
also, I had some open pumpkin in the fridge and made my usual “Elvis” bake swapping out the banana for the pumpkin and it was even more decadent. of course, then you can’t really call it an “Elvis“, but it was delish!
not really baking! just stir and put in oven. no creaming, no fat, just good! and if you try the “Elvis” one w/ peanut butter powder, banana and cocoa powder-it will make you feel guilty, but it is oh so good for you!
