Yes, I said decadent breakfast oatmeal and it’s not an oxymoron.

A while back I posted a great “Elvis” baked oatmeal that even my carnivore DH enjoys.  Now I re-designed a recipe from a bowl called “Lemon Bar” oatmeal into one with the same flavors but as a baked version:

pre-heat oven to 380 and spray an 8 oz. custard cup

This serves one.

1/2 banana
1/4 C almond milk
1-1/2 tsp. lemon juice
1/3-1/2 C oatmeal (check what your particular kind says is a serving! I’ve been using steel cut oats which says 1/3 C, but if I use old-fashioned, it’s a 1/2 C)
2 packets of truvia (any stevia or no-cal sweetener)
dash of salt
1/8 tsp. powder
1/8 tsp lemon and coconut extract
2 tbsp. chopped almonds or walnuts/pecans
1-1/2 tsp. coconut
1/3 C fresh blueberries

Mash banana, milk,juice, extracts, sweetener, salt together.  Stir in oats,coconut, nuts and powder.  Pour mixture into prepared baking cup.  Bake for 25-30 minutes, until firm to touch and nicely browned.  Use a knife around the cup and turn onto serving plate.  Top with fresh berries.  Yum!
