I’ve decided on fish burritos tonight.

We bought a large piece of mahi mahi at the market the other day and, even with the boys over, still have a big piece leftover.

It obviously has to be used today!

After a sleepless night without power here due to the worst monsoon we’ve experienced since moving to AZ, I’m in no mood to get creative on re-inventing a piece of fish.

With that in mind (and the knowledge that dh is NOT a fan of leftover anything, let alone fish)I decided on flaking up the fish (these filets came with a bountiful of bones)and putting them into some low-carb tortillas.  The fish was grilled with some lemon/pepper-so there will be no problem adding some shredded cabbage and fat-free refried beans to the mixture.  

My one difference?  I’m going to spritz them with some EVOO and (hopefully the next monsoon will wait) grill them.  We love our salsa, but on this occasion-I bought some prepared pico de gallo at the market (told you, I’m exhausted and not in the mood from lying in a 100 degree house with 3 dogs howling-one on my head and the cat crying)which will top them.

I’m making a side of nice cool cantaloupe and jicama chunks with a squeeze of lemon juice.

This will make a cool, filling and delicious meal!  Remember-this would work with any leftover grilled fish or chicken (to keep things light).  

And now, back to my story on parental safety tips on making sure kids leave school, get home and stay safe until their adults make it home.
