Well, it seems my Monday column was very much on everyone’s mind!  Lots of people talked about getting “back on the horse” and watching what they were eating and exercising!

I must say, I did pretty well at the entire thing!  Kept foods clean (meaning I didn’t eat too much and what I did was healthy, you know, my usual).

Tuesday, I found some salmon in the freezer-baked it with some fresh lemon thyme, dill and chives from my box of herbs.  I made some spinach salad with mushrooms and cherry tomatoes with some homemade vinagraitte on the side.  Finished it off by serving the last of the La Brea Rosemary and Olive Oil bread with some bruschetta as topping.

Hubby made us some popcorn for munching during a pretty boring movie.  The Runaways for those that are wondering.

Wednesday-I saw that I still hadn’t used a pork chop that had been grilled a couple of weeks ago. That was my birthday and I got really sick-so this was the one that was supposed to feed me and be hubby’s lunch the next day.  Well it was dinner for the two of us.  I chopped it up into some of that bruschetta and served it over some whole wheat couscous.  Our side was steamed broccoli with my husband’s favorite lemon/garlic dressing.

Thursday-I decided on a vegetarian meal.  Decided to use inspiration from my new cooking friend-Ed Cervantes and his site and made my version of his bean medley and served it over some quinoa.

I did my best to keep up with my walking, now that I’m feeling a might stronger.  Used the treadmill for the most part.  Still, I’m feeling more like a limp and wet dish rag than a woman on the go.

That doctor said 3 weeks-so I’m thinking I will see a great amount of improvement in the next few days.  

And here we are-Friday!  As usual for me, I have 2 columns to post and must get to my walking.  For dinner-we haven’t had any red meat for a good bit, so I think I’ll surprise my carnivore mate by having a ribeye ready to grill later.  What goes better with  steak than salad?  For the carb side, I’m going for either a skinny potatoes Anna (I use lots of onion, garlic and some spuds and sprinkle with both kosher salt and fresh ground pepper and either spray it with olive oil or butter flavored pam).

How did everyone else do on trying to put their Thanksgiving feast “behind” them-in a good way?
