I realize that many of you are still living in a “deep freeze“-but I am NOT.  In truth-we broke a heat record yesterday from 1986.  Today we just broke one from 1971.

It’s that hot.  Poor Lucky, my sunbather, could only stand sitting on the patio for a short while.  Our walk already must be over with by 9 in the morning or we wait to use the shaded side of the blocks after 6.

That said, this weekend’s dinners were both easy and fast.  Yesterday I prepped some large shrimp with some old bay and evoo.  I used the same combo on some carrots and broccoli and roasted them while I made some brown rice pilaf.  

Dinner prep took me about 10 minutes and it finished in about 25-most of it waiting for the rice to get done.

Tonight-just as fast.  I made a pork loin roast the other night and a good portion of orzo.  The leftovers fed dh his lunch the next day and the rest will be tonight’s feast.  I’m just going to chunk up the pork and heat it up in some marinara sauce that I’ll add some merlot too.  (Since I don’t drink I might as well get some use out of that bottle!) That will be served over the orzo with a side salad of spinach, grape tomatoes and dried cranberries.

I figure if this meal takes 10 minutes-I’m doing something wrong!

Keeping it fast and cool is what these “Dog Days of Spring” here in AZ are all about-but I’m sure it will even work for those of you who are shivering up a storm in the Northeast!
