After having one of the most personally challenging 3 months of life in easily the past decade, I think I’m getting myself together.  Back on my RA meds, epis helping the degenerative/herniated discs and (knock on wood)no more illnesses/fevers-and here we are at Mother’s Day.

Last weekend we celebrated Sarah and Adam’s birthdays.  I made both a ribeye and pork roast.  Lots of noodle kugel, roasted veggies and a salad bar.  We were going to do s‘mores but the late hour had us all preferring plan B.  Sam made a beautiful birthday cake.

Mother’s Day?  The adult Nadel men will be working, so I’m going to keep that easy menu thing going since we “moms” are all tired and just trying to keep our heads above the proverbial water line.

If we‘re lucky and we are still able to use the fire pit, we’ll finally do the s‘mores.  We all love ribs (okay, maybe not Jackson, but he might try them since his favorite cousins like them)so I’ll get those started with a dry rub by Friday.

This time?  I’ve found that what seems to be a good mix is equal amounts of raw sugar and kosher salt.  I know, sounds odd-but the boys don’t like spicy and this way they have that satisfying salty/sweet thing going on and then I just put out a sweet, a hot and a savory BBQ sauce.  Sides:  Going with some baked beans in the crockpot.  I’ll see if the girls will add either a shared crudité tray or a couple of easy salads.

Depending on the weather-it would even be nice to eat on the patio.  But lately weather here in the Valley of the Sun has been precarious to say the least!  Yesterday-80 degrees until 4 p.m.. Then the sun went down, rain clouds descended and in under 20 minutes the winds were at 40 MPH, lightening, thunder and sideways rain!
