Happy Friday!  Hard to believe but here we are just about to welcome fall/autumn back!  My daughter and son-in-law are celebrating their 6th wedding anniversary on the 11th.  

I issued a challenge for all readers to suggest their favorite "hot salad" and "cold soup".  No one really sent a recipe-but it seems a cold tomato based soup (gazpacho or tomato basil and roasted red pepper) were the top ones-not one of you mentioned an old Scandinavian dish that is essentially a fruit soup!  My mom used to make a great one, but like me there really wasn't an actual recipe involved.

Many of you mentioned grilling a protein and placing it hot over salad greens so that they wilt for the hot salad-Vikki89 mentioned a hot potato salad.  This is sometimes called German Potato Salad.

Here's a recipe I found for it on
A flavorful potato salad with hot bacon dressing.
Cook Time: 15 minutes
Total Time: 15 minutes
•5 slices bacon, diced and cooked until crisp
•2 tablespoons bacon drippings
•1 1/2 tablespoons all-purpose flour
•1 tablespoon granulated sugar
•1 teaspoon salt
•1 tablespoon prepared mustard
•1/2 cup cider vinegar
•1/2 cup water
•4 cups sliced cooked potato
Cook bacon; set aside. Heat bacon drippings; blend in flour, sugar, salt and mustard. Gradually add vinegar and water, stirring constantly until smooth. Continue cooking over low heat, stirring, until thickened. Add potato and heat through, gently stirring to mix. Sprinkle with reserved bacon.
Serves 4.  

From's a recipe for a cold and low calorie Tomato Basil Soup:

Tomato basil soup is similar to a gazpacho soup, but with little extra flavoring, the natural sweetness of the tomatoes really shines through. This cold tomato soup recipe low calorie, low-fat, vegetarian and vegan.

•2 pounds tomatoes
•1 bunch fresh basil, chopped
•2 cups vegetable broth
•2 cloves garlic
•2 tsp olive oil
•2 tbsp balsamic vinegar
•salt and pepper to taste
Place all ingredients in a food processor or blender and process until almost smooth, or until desired consistency is reached.
Transfer to a large saucepan and simmer over low heat for 10 minutes.
This quick and easy tomato soup is delicious hot or cold. Makes four servings of tomato and basil soup.
