This week I was able to share my time with two moms who have banded together to create a bakery that gears itself to helping those with special dietary needs.

Judy Mendoza and Suraya Iller.  Judy has not one, but 2 special needs kids.  Suraya’s husband is their therapist.  Between them they have 5 children.    

Always running into one another at Iller’s husband’s office they became friends and decided to start a business creating bakery products that meet the needs of all people  with a host of food related restrictions.

They started by creating enough recipes to try and get into selling at farmer’s markets.  They had to rent an approved kitchen space-all food products that are sold have to be made in certified work areas.

Then they pleaded with a local farmer’s market manager that covers 4 markets.  She didn’t give them much in the way of hope, but after realizing how many customers asked her if someone could come and sell-she phoned them up and let them have a spot, then she made room for them at other markets!

Now the pair do 4 markets a week, sell out every time and are about to open up an actual bakery.

I realize that this isn’t my usual “What’s Cooking?“, but these ladies are working hard, on a shoe string budget and want to let everyone know that they‘re willing to ship, have a website (sorry ladies, I’m no longer able to put websites up, but just use the store name and add the .com)and will soon enter the Mother’s Market stores!

They call their business Loving Nutrtion Shop.

What I loved was that these two want to help others who would just like to have a great cookie, a piece of cake, bread for a sandwich that looks like everyone else and doesn’t taste like cardboard!

They sent me home with a sample of their best selling cookie-oatmeal chocolate chip.  It was pretty darn good.
