Thank goodness Spring is here!

We have more than broccoli and apples to use as sides.

My sister-in-law was here visiting and I took the chance to serve up some pretty luscious dishes:

Ribeye roast-bone in.  Crusted in fresh rosemary, Dijon and garlic.

Spinach salad bar:  obviously spinach, the boys (all 3)favorite grape tomatoes, garbanzo beans, sliced mushrooms and sliced black olives.  Dressings ranged from a fat-free vinaigrette, lite Caesar and a Honey mustard.  

Yukon gold potatoes.  I coated all with EVOO, sea salt and some fresh garlic and baked until soft on the inside and crispy on the outside.  A myriad of toppings on the side.

Dessert:  espresso brownies.  Evidently so good that 20 month old Jackson kept looking up to the sky and moaning. (I guess that proves that at 20 months you know there’s a God!)

As you can see-the menu was pretty easy, everyone could adapt the sides to please their palettes and claim dinner a success.

Earlier in the week I took advantage of nice thin asparagus, blackberries and strawberries and was happy to see that prices were coming down on lots of produce staples!

Even Thompson grapes were looking good and affordable at .77 cents a pound!
