DH absolutely hates leftovers.  He also doesn’t exactly love meatloaf-which I made for dinner last night.

So in order to make sure we get the “full” value out of what’s left from the said loaf and the veggies in the fridge, I’m making it into something that most people do love:

Spaghetti and meat sauce

Easy enough.  First off, I’m using some whole wheat angel hair.  I’m not going through any real hoops on the sauce.  Just going to chunk up the meatloaf and stir it into a jar of double veggie marinara.  I’m going to roast some mini bell peppers and mushrooms and stir them in as well.

Spinach salad with some orange supremes and a simple vinaigrette will round out the meal.  

For dessert-double espresso brownies with dried cherries and toasted pecans.

Not a bad Oscar worthy meal!
